Ingredients:
1/4 cup Mint
1/4 cup Green Onion
Lettuce of your choice
1/4 cup Cilantro
1 Cucumber
1 Radish
1 Tomato
2 TBS Honey / Maple Syrup
1 TBS Minced Ginger Garlic
1 TBS Sesame seeds
1/4 cup Avocado Oil
3 TBS Coconut Aminos
2 Garlic Cloves
1 Squeezed Lime
Pinch of Salt
Directions:
Wash, cut, slice and dice your veggies and herbs (mint, lettuce, green onion, cilantro, cucumber, tomatoes and radishes). Put aside.
Dice/grate your ginger and garlic. Fun Fact, I like to freeze my ginger and grate it frozen! It stays fresh and doesn't go bad.
Whisk your ginger, garlic, avocado oil, sesame seeds, coconut aminos, salt, and honey together for a tasty Sesame Honey Dressing. Wallah! (Dressing can be stored in the fridge up to 3 weeks.)
Mix your veggies, fruit and herbs together in a bowl and drizzle your dressing. Top it with pickled Carrots & Daikon. Congratulations - yes, it is that simple.
I really enjoy this dish because it is light, refreshing and full of medicine. Garlic and ginger to heal inflammation and veggies to indulge in various nutrients, with refreshing and hydrating cucumbers! Adding any Do Chua (translates to pickling stuff!) toppings like pickled Daikon and Carrots to bring a Banh Mi sammie to your home - minus the bread of course! #Fermentationforthewin
